1/2 cup mini chocolate chips for the eyes and mouth
1/4 cup orange frosting or small orange candy pieces for the nose
1 teaspoon alcohol-free vanilla extract to enhance the cream filling
1/2 cup white sparkling sugar for a snowy effect
Instructions
Step 1: Preparation: Start by ensuring your sugar cookies are completely cooled to room temperature. If they are even slightly warm, the ice cream will melt immediately. Take your vanilla ice cream out of the freezer for about five minutes to let it soften just enough to be scoopable but still firm.
Step 2: Scoop and Press: Place one scoop of ice cream on the flat side of 12 cookies. If you want a more uniform look, you can slightly flatten the scoop with the back of a spoon. Place a second cookie on top, flat side down, and press gently until the ice cream reaches the edges of the cookies.
Step 3: Roll the Edges: Pour your white sparkling sugar into a shallow bowl. Gently roll the edges of the ice cream sandwich in the sugar. This creates a beautiful, shimmering snowy effect around the middle of your snowman head.
Step 4: Decorate the Face: Using the mini chocolate chips, press two into the top cookie to create eyes and a few more in a semi-circle to create a coal-like smile. Use a small piping bag or a toothpick to apply a triangle of orange frosting for the carrot nose. If using candy, press it firmly into the center of the face.
Step 5: Flash Freeze: Place the completed sandwiches on a parchment-lined baking sheet and put them back in the freezer immediately. Let them set for at least one hour to ensure the ice cream is firm before serving to your guests.
