Cranberry and White Chocolate Cheesecake

Cranberry and White Chocolate Cheesecake

  • Total Time: 1 hour 45 minutes

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar (for crust)
  • 24 ounces cream cheese, softened to room temperature
  • 1 cup granulated sugar (for filling)
  • 1 cup white chocolate chips, melted and slightly cooled
  • 3 large eggs, room temperature
  • 1 teaspoon alcohol-free vanilla extract
  • 1/4 cup sour cream, room temperature
  • 1.5 cups fresh or frozen cranberries
  • 1/4 cup orange juice
  • 2 tablespoons granulated sugar (for sauce)

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. In a medium bowl, combine the graham cracker crumbs, melted butter, and two tablespoons of sugar. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then remove it from the oven and set it aside to cool while you prepare the filling.
  2. In a small saucepan over medium heat, combine the cranberries, orange juice, and two tablespoons of sugar. Simmer the mixture for about 8 to 10 minutes, or until the cranberries have burst and the sauce has thickened. Press the sauce through a fine-mesh sieve to remove the skins, resulting in a smooth puree, and let it cool completely.
  3. In a large bowl, beat the softened cream cheese and one cup of sugar until the mixture is smooth and fluffy. Add the eggs one at a time, beating on low speed after each addition just until combined. Stir in the melted white chocolate, alcohol-free vanilla extract, and sour cream, ensuring everything is well incorporated without overmixing, which can cause cracks.
  4. Pour the cream cheese batter over the cooled crust. Drop small spoonfuls of the cranberry puree onto the top of the batter. Use a toothpick or a butter knife to gently swirl the cranberry sauce into the cheesecake, creating a marble effect. Be careful not to over-swirl, as you want the distinct red and white contrast to remain visible.
  5. Bake the cheesecake for 55 to 65 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and crack the door open, allowing the cheesecake to cool slowly for one hour inside. Once cooled to room temperature, refrigerate the cheesecake for at least 6 hours, or ideally overnight, to ensure it sets properly before slicing.
