Winter Berry Trifle with Meringue Topping

Winter Berry Trifle with Meringue Topping

  • Total Time: 1 hour

Ingredients

  • 4 cups mixed winter berries, such as cranberries, raspberries, and blackberries
  • 1/2 cup granulated sugar for the berry mixture
  • 1 tablespoon cornstarch
  • 2 teaspoons alcohol-free vanilla extract
  • 1 large sponge cake, cut into 1 inch cubes
  • 3 cups thick vanilla custard
  • 4 large egg whites, at room temperature
  • 1 cup caster sugar for the meringue
  • 1/2 teaspoon cream of tartar
  • 1/4 cup pomegranate seeds for garnish

Instructions

  1. In a medium saucepan, combine the mixed berries, 1/2 cup granulated sugar, and cornstarch. Heat over medium heat, stirring gently, until the berries begin to break down and the juices thicken into a glossy sauce. Stir in one teaspoon of the alcohol-free vanilla extract, then remove from heat and let the mixture cool completely before assembling the layers.
  2. Place half of the sponge cake cubes into the bottom of a large glass trifle bowl. Spoon half of the cooled berry compote over the cake, allowing the juices to seep into the sponge. Pour half of the vanilla custard over the berries, spreading it to the edges of the bowl to create a clean line. Repeat these layers once more with the remaining cake, berries, and custard.
  3. In a large, clean glass bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. Gradually add the caster sugar one tablespoon at a time while continuing to beat on high speed. Add the remaining teaspoon of alcohol-free vanilla extract and continue whisking until the meringue is stiff, glossy, and holds its shape firmly.
  4. Spoon the meringue onto the top of the custard layer, using the back of a spoon to create decorative peaks and swirls. If you have a kitchen torch, gently brown the tips of the meringue until they are golden. Alternatively, you can place the trifle under a preheated broiler for 1 to 2 minutes, watching very closely to ensure the meringue browns without melting the custard below.
  5. Scatter the fresh pomegranate seeds over the top of the toasted meringue for a final festive touch. Chill the trifle in the refrigerator for at least two hours before serving to allow the layers to set and the flavors to meld together beautifully.
