  • Slice the tomatoes and mozzarella, and make sure your chicken is cooked and ready to use. Pat the tomatoes dry if they are especially juicy, so the wrap does not get soggy.
  • If your tortillas feel stiff, warm them briefly in a dry skillet or microwave so they are easier to roll. A soft wrap is much less likely to split.
  • Lay the tortilla flat and layer on spinach or lettuce first, then chicken, tomatoes, mozzarella, and basil. Drizzle lightly with olive oil and balsamic glaze, then season with a little salt and black pepper.
  • Fold in the sides, then roll the wrap snugly from the bottom up. If you like, slice it in half on a slight diagonal for a neat, lunch-ready finish.

Notes

Keep the tomatoes as dry as possible, because too much moisture can make the wrap soft. If you are packing it ahead, layer the greens against the tortilla to help create a little barrier between the bread and the wetter ingredients.
Use good-quality tomatoes and fresh basil if you can, since those simple ingredients really shine in this recipe. A light hand with the balsamic glaze also helps keep the flavors balanced instead of overly sweet.
