Ingredients
  

  • 2 medium apples such as Granny Smith or Honeycrisp, cored and sliced into thick rounds
  • 1 cup soft caramels
  • 2 tablespoons heavy cream or milk
  • 1 tablespoon unsalted butter
  • 0.3333333333 cup chopped peanuts, pecans, or walnuts
  • 0.25 cup mini chocolate chips optional
  • 1 tablespoon lemon juice to help keep the apples fresh

Instructions
 

  • Wash the apples well, then dry them completely. Slice them into thick rounds, remove the core, and brush or toss them lightly with lemon juice to help slow browning.
  • In a small saucepan over low heat, combine the caramels, cream, and butter. Stir often until the mixture is smooth and glossy. Keep the heat gentle so the caramel does not scorch.
  • Place the apple slices on a parchment-lined tray. Spoon a small amount of caramel onto each slice, then sprinkle with chopped nuts or any other topping you like.
  • If you are using chocolate chips, sprinkle them over the warm caramel right away so they stick nicely. Let the bites sit for a few minutes so the caramel sets slightly before serving.

Notes

These are best enjoyed soon after assembling, while the apples are still crisp. If you need to store them, place them in an airtight container in the refrigerator for up to 1 day. To keep the texture nice, avoid stacking them. There is no need to reheat, but you can let them sit at room temperature for a few minutes before serving.
