Chocolate Mousse

Ingredients
  

  • 6 oz dark chocolate chopped
  • 1 cup heavy cream divided
  • 2 eggs separated
  • 2 tbsp granulated sugar
  • 1 tsp alcohol-free vanilla
  • 1 pinch salt

Instructions
 

  • Place the chopped chocolate in a heat-safe bowl. Warm a portion of the cream until just steaming, then pour it over the chocolate. Let it sit for a minute, then stir until smooth and glossy.
  • Separate the eggs carefully. Whisk the yolks with sugar and vanilla until smooth. In a clean bowl, whip the remaining cream until soft peaks form.
  • Stir the egg yolk mixture into the melted chocolate until fully blended. The mixture should look thick and silky at this point.
  • Gently fold the whipped cream into the chocolate mixture in two or three additions. Work slowly so the mousse stays light and fluffy.
  • Spoon the mousse into small bowls or glasses. Chill for at least 2 hours, then serve cold with your favorite toppings.

Notes

Store chocolate mousse covered in the refrigerator for up to 3 days. Keep it chilled until serving, because the texture is best when cold. This dessert does not need reheating. If it has been in the fridge for a while, let it sit at room temperature for a few minutes before serving so the flavor softens slightly.
