Ingredients
  

  • 2.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2.25 tsp instant yeast
  • 0.5 tsp salt
  • 0.75 cup warm milk
  • 3 tbsp unsalted butter softened
  • 1 large egg
  • 0.25 cup brown sugar for filling
  • 1.5 tsp ground cinnamon for filling
  • 1 cup powdered sugar for glaze
  • 1 tbsp milk or cream for glaze, plus more as needed
  • 0.5 tsp alcohol-free vanilla for glaze

Instructions
 

  • In a large bowl, combine the flour, sugar, yeast, and salt. Add the warm milk, softened butter, and egg, then mix until a soft dough forms. Knead until smooth and elastic.
  • Cover the dough and let it rise in a warm spot until puffy. This helps create a tender texture and makes the bites taste bakery fresh.
  • Stir together the brown sugar and cinnamon in a small bowl. This simple mixture melts into the dough and creates the signature cinnamon roll flavor.
  • Roll the dough into a rectangle, brush lightly with softened butter, and sprinkle the cinnamon sugar evenly over the top. Cut the dough into small pieces and place them close together in a prepared baking dish.
  • Bake until the tops are lightly golden and the centers are cooked through. The smell in your kitchen will be amazing at this point.
  • Whisk the powdered sugar, milk or cream, and alcohol-free vanilla until smooth. Drizzle it over the warm bites so it melts into every nook and cranny.

Notes

Store leftover bites in an airtight container at room temperature for up to 2 days, or refrigerate them for up to 5 days. Reheat briefly in the microwave or a low oven. Can be made ahead, and freezes well after baking.
