Ingredients
  

  • 3 cups cooked chicken shredded or diced
  • 4 cups egg noodles or cooked pasta
  • 2 cups frozen mixed vegetables thawed
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup milk
  • 2 cups shredded cheddar cheese divided
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt or to taste
  • 1 tsp black pepper or to taste
  • 1 tbsp butter for greasing the baking dish
  • 1 cup breadcrumbs optional

Instructions
 

  • Preheat the oven and lightly grease a casserole dish so the finished bake releases easily.
  • In a large bowl, combine the chicken, noodles, vegetables, cream of chicken soup, sour cream, milk, seasonings, and most of the cheese. Stir until everything is evenly coated.
  • Spoon the mixture into the prepared baking dish and spread it into an even layer. If you like a little crunch, sprinkle breadcrumbs and the remaining cheese over the top.
  • Bake until the casserole is hot throughout, bubbling at the edges, and the top is lightly golden.
  • Let the casserole rest for a few minutes before serving so it sets up a bit and is easier to scoop.

Notes

Use fully cooked chicken so the casserole comes together quickly and evenly. Do not skip the short resting time after baking, because it helps the sauce settle. If the mixture looks too thick before baking, add a small splash of milk. If you want a richer flavor, mix in a little extra cheese near the end of baking.
