Ingredients
  

  • 1 lb chicken cutlets or thin chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs or panko for extra crunch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup oil for frying or baking
  • 6 slider buns
  • 1 cup lettuce or shredded lettuce
  • 0.5 cup pickles
  • 0.5 cup mayo or a simple sandwich sauce

Instructions
 

  • Pat the chicken dry and cut it into slider-sized pieces if needed. Season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  • Place the flour in one bowl, whisk the eggs in a second bowl, and add breadcrumbs to a third bowl. This simple setup helps the chicken cook up with a crisp, even coating.
  • Dip each piece into the flour, then the egg, then the breadcrumbs. Press gently so the crumbs stick well and the coating turns extra crunchy after cooking.
  • Fry the chicken in hot oil until golden brown and cooked through, or bake it on a lined sheet pan until crisp. Let the pieces rest briefly on a wire rack or paper towel so they stay crunchy.
  • Slice the buns and add a little sauce to the bottom half. Layer on lettuce, the crispy chicken, pickles, and the top bun. Serve right away while the chicken is still warm.

Notes

Do not rush the breading step, because a good coating makes all the difference. If frying, keep the oil hot enough so the chicken cooks quickly without getting greasy. For the best texture, assemble the sliders just before serving. If you are making a large batch, keep the cooked chicken on a rack in a low oven so it stays crisp while you finish the rest.
