Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 cup salsa
  • 0.5 cup chicken broth
  • 1 packet taco seasoning alcohol-free or use a simple mix of cumin, garlic powder, onion powder, and chili powder

Instructions
 

  • Place the chicken in the crockpot, then pour the salsa and chicken broth over the top. Sprinkle the seasoning evenly across the chicken.
  • Cover and cook on low until the chicken is fully cooked and easy to shred. If you are short on time, the high setting works too, but low gives the best texture.
  • Use two forks to shred the chicken right in the crockpot. Stir it back into the juices so every bite stays moist and flavorful.
  • Taste and adjust the seasoning if needed, then serve warm with your favorite sides or use it as a filling for tacos and burritos.

Notes

If you like a little extra richness, stir in a spoonful of cream cheese at the end. For a lighter finish, add fresh lime juice and chopped cilantro before serving. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
