Easy Chicken Quesadilla

Instructions
 

  • Warm a skillet over medium heat and add a little oil or butter. Cook the onion and bell pepper until softened, then stir in the chicken, salt, pepper, and garlic powder. Cook just until everything is hot and well combined.
  • Lay one tortilla flat in a clean skillet or on a board. Sprinkle cheese over half of the tortilla, add the chicken mixture, then top with a little more cheese. Fold the tortilla in half to close it.
  • Place the folded quesadilla in a skillet over medium heat. Cook for 2 to 3 minutes per side, pressing gently with a spatula, until the tortilla is crisp and the cheese has melted.
  • Transfer the quesadilla to a cutting board and let it rest for a minute. Slice into wedges and serve warm with your favorite toppings.

Notes

Use medium heat so the tortilla browns slowly and the cheese has time to melt. Do not overfill the tortilla, or it may be harder to flip and seal. For an extra crispy finish, brush the outside of the tortilla with a thin layer of butter or oil before placing it in the pan.
