Ingredients
  

  • 2 cups cooked chicken breast sliced or shredded
  • 4 pita bread or soft flatbreads
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 cup fresh cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 4 red onion thinly sliced
  • 2 cups romaine lettuce or mixed greens
  • 1 cup feta cheese crumbled
  • 2 tbsp fresh parsley or dill chopped
  • salt and black pepper to taste

Instructions
 

  • In a small bowl, stir together the Greek yogurt, lemon juice, garlic, olive oil, salt, and pepper until smooth. Taste and adjust the seasoning so it is bright and creamy.
  • Slice the chicken if needed, then prepare the cucumber, tomatoes, onion, and greens. Keeping everything ready makes the wraps come together quickly and neatly.
  • Warm the pita bread or flatbreads in a dry skillet or microwave for a few seconds. This helps them soften and makes wrapping easier.
  • Spread a spoonful of yogurt sauce over each pita, then layer on the lettuce, chicken, cucumber, tomatoes, onion, feta, and herbs. Keep the filling toward the center so the wrap holds together well.
  • Fold the sides in, roll up the wrap snugly, and slice in half if you like. Serve right away with extra sauce on the side.

Notes

Store the chicken, vegetables, sauce, and pita separately in airtight containers in the refrigerator for up to 3 days. Reheat the chicken gently in the microwave or a skillet until warm, then assemble the wrap fresh. If the wrap is already assembled, it is best enjoyed cold or at room temperature.
