  • Heat the oven to 350°F and line a muffin pan with cupcake liners. This helps the cupcakes bake evenly and makes cleanup easy.
  • Whisk the flour, baking powder, baking soda, and salt in a medium bowl. If you are making chocolate cupcakes, whisk in the cocoa powder too.
  • In a large bowl, beat the softened butter and sugar until light and fluffy. This step adds air to the batter and helps create a tender crumb.
  • Beat in the eggs one at a time, then mix in the alcohol-free vanilla. Add the dry ingredients in batches, alternating with the milk, and stir just until combined.
  • Spoon the batter into the liners, filling each about two thirds full. Bake until the tops spring back lightly and a toothpick comes out clean, then cool the cupcakes completely.
  • Beat the frosting until smooth, then tint it with your favorite Halloween colors. Pipe or spread it over the cooled cupcakes, then finish with sprinkles, candy eyes, or cookie crumbs.

Notes

Bring the butter, eggs, and milk to room temperature for the smoothest batter. Also, do not overmix once the flour goes in, because that can make the cupcakes dense instead of soft. If you want sharp frosting swirls, chill the cupcakes for a few minutes after frosting so the decorations hold their shape better. Store the cupcakes in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. If refrigerated, let them sit at room temperature before serving so the frosting softens. To freeze, wrap unfrosted cupcakes tightly and store them for up to 2 months. Thaw at room temperature, then frost and decorate when ready.
