Ingredients
  

  • 1 ½ to 2 pounds boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • ½ cup chicken broth
  • ¼ cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon honey
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley chopped (optional, for serving)

Instructions
 

  • Pat the chicken dry, then season both sides with salt, pepper, and Italian seasoning.
  • Warm the olive oil and butter in a large skillet over medium heat. Add the chicken and cook until golden on both sides, then transfer it to a plate.
  • Lower the heat slightly and add the garlic to the skillet. Stir briefly, then pour in the broth, lemon juice, lemon zest, and honey. Scrape up the browned bits from the pan.
  • Return the chicken to the skillet and spoon the sauce over the top. Simmer gently until the chicken is cooked through and the sauce has reduced slightly.
  • Turn off the heat, sprinkle with parsley if desired, and serve right away with plenty of sauce spooned over the chicken.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat with a small splash of broth or water to keep the sauce smooth.
