No Bake Pumpkin Balls

No Bake Pumpkin Balls are one of those easy treats I love making when I want something sweet, cozy, and quick without turning on the oven. They come together with simple pantry ingredients and set up beautifully in the fridge.

Ingredients
  

  • 1 cup pumpkin puree plain, not pumpkin pie filling
  • 1.5 cups graham cracker crumbs or crushed digestive biscuits or vanilla wafer crumbs
  • 1 cup old fashioned oats quick oats also work for a softer texture
  • 1 cup powdered sugar
  • 1 tsp pumpkin pie spice or a mix of cinnamon, nutmeg, ginger, and cloves
  • 1 tsp vanilla extract use alcohol-free vanilla
  • 2 tbsp butter melted and cooled slightly
  • 0.5 cup mini chocolate chips optional for rolling or mixing in
  • 0.5 cup chopped nuts optional for rolling or mixing in

Instructions
 

  • In a large bowl, stir together the pumpkin puree, melted butter, vanilla, and pumpkin pie spice until smooth.
  • Mix in the graham cracker crumbs, oats, and powdered sugar. Stir until the mixture becomes thick and easy to shape.
  • Place the bowl in the refrigerator for about 15 to 20 minutes so the mixture firms up a little.
  • Scoop out small portions and roll them between your hands into bite-sized balls.
  • Roll the balls in mini chocolate chips, crushed nuts, or a little extra graham crumb for a pretty finish.
  • Chill again until firm, then serve cold or at cool room temperature.

Notes

If your mixture feels too soft, add a little more graham cracker crumbs or oats. If it feels too dry, add a spoonful of pumpkin puree or melted butter. Chilling before rolling makes the process much easier, especially on warm days. Store the balls in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze them in a single layer first, then transfer to a freezer-safe container. No reheating is needed, just thaw in the fridge for a bit before serving.
