- 6 large eggs
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp white vinegar
- salt to taste
- black pepper to taste
- red food coloring or a small amount of beet juice
- blue food coloring
- chopped chives or paprika optional garnish
Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then lower the heat and cook until the eggs are hard-boiled. Transfer them to ice water so they cool quickly and peel more easily.
Peel the eggs and slice them in half lengthwise. Gently remove the yolks and place them in a bowl. Set the egg whites aside on a serving tray.
Mash the yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth and creamy. Taste and adjust the seasoning if needed.
Separate the filling into small bowls if you want different shades. Tint one portion red and another blue, then leave some filling white so the platter feels bright and balanced.
Spoon or pipe the filling into the egg whites. Arrange the eggs on a serving plate and garnish with chives or a light sprinkle of paprika if you like.
Use eggs that are a few days old, since they usually peel more cleanly. Chill the eggs after boiling, and if you have time, refrigerate the finished platter for 20 to 30 minutes before serving so the flavors settle in nicely.
Store leftover deviled eggs in an airtight container in the refrigerator for up to 2 days. Since they are best served chilled, there is no reheating needed, just keep them cold until ready to enjoy.
