Instructions
Preheat the oven to 350°F and grease two 9-inch cake pans. Line the bottoms with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
In another bowl, whisk together the granulated sugar, brown sugar, oil, eggs, pumpkin puree, milk, and alcohol-free vanilla until smooth.
Add the dry ingredients to the wet ingredients and stir just until combined. Do not overmix.
Divide the batter between the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
