  • Preheat your oven and lightly grease your baking dish.
  • In a large bowl, whisk together the pumpkin puree, sugars, eggs, cream, vanilla, cinnamon, nutmeg, ginger, and salt until smooth and well combined.
  • In another bowl, stir together the flour, oats, brown sugar, cinnamon, and a pinch of salt. Cut in the butter until the mixture looks crumbly and starts to clump together.
  • Pour the pumpkin filling into the prepared dish, then sprinkle the streusel evenly over the top.
  • Bake until the filling is set and the topping is deeply golden and crisp. Let it cool a little before serving so the layers can settle.

Notes

Store leftovers covered in the refrigerator for up to 4 days. To reheat, warm individual portions in the oven until heated through. Serving soon after baking gives the best crunch.
