Ingredients
  

  • 1 package graham crackers or tea biscuits
  • 2 cups heavy cream whipped until fluffy
  • 8 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 1 tsp alcohol-free vanilla
  • 3 cups fresh raspberries plus more for topping
  • 0.5 cup raspberry jam or preserves
  • 1 tsp lemon zest optional

Instructions
 

  • Beat the cream cheese until smooth, then mix in the powdered sugar and alcohol-free vanilla. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
  • Spread a thin layer of the cream mixture in the bottom of a dish. Add a layer of graham crackers or biscuits, then top with more cream and a spoonful of raspberry jam. Scatter raspberries over the top.
  • Continue layering until you use all the ingredients, finishing with a smooth layer of cream. Add extra raspberries on top for a pretty finish.
  • Cover the cake and refrigerate for several hours, or overnight if possible. This rest time lets the crackers soften and turn into a tender, cake-like texture.
  • When ready to serve, cut into neat squares or slices. A few fresh raspberries on the side make each serving feel extra special.

Notes

Store covered in the refrigerator for up to 3 days. Best texture is within the first 24 to 48 hours. Do not reheat; serve cold.
