Spooky Halloween Brookies

These spooky Halloween brookies bring together the best of both worlds, fudgy brownies and chewy chocolate chip cookies, in one festive pan. They are fun to make, easy to slice, and always a hit at parties, bake sales, or a cozy night in.

Ingredients
  

  • 1 cup unsalted butter melted
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 2 eggs
  • 2 teaspoons alcohol-free vanilla extract
  • 1.5 cups all-purpose flour
  • 0.75 cup cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup chocolate chips
  • 1 brownie mix or homemade brownie batter
  • 1 cookie dough, homemade or store-bought
  • 0.25 cup Halloween sprinkles or candy decorations or as needed

Instructions
 

  • 1. Prepare the pan
    Preheat the oven and line your baking pan with parchment paper, leaving a little overhang so the brookies lift out easily later. This small step makes slicing much simpler.
  • 2. Make the brownie layer
    Mix the brownie batter according to your recipe or package directions. Spread it evenly into the prepared pan so it forms the bottom layer.
  • 3. Add the cookie layer
    Flatten pieces of cookie dough and place them over the brownie batter. Try to cover the top as evenly as possible, but do not worry if a little brownie peeks through.
  • 4. Decorate for Halloween
    Sprinkle the top with Halloween sprinkles or your favorite festive candy pieces. Lightly press them into the dough so they stay put while baking.
  • 5. Bake until set
    Bake until the edges look set and the center is just cooked through. The middle should still be soft, since the brookies will continue to firm up as they cool.
  • 6. Cool and slice
    Let the pan cool completely before lifting out the brookies and cutting them into squares. Clean cuts are much easier once the dessert has fully cooled.

Notes

Store leftovers in an airtight container at room temperature for a few days, or refrigerate them if your kitchen is warm. To warm them up, microwave a square for a few seconds until the chocolate softens. You can also freeze individual squares wrapped well in an airtight container.
